My addiction to granola has no limits and I have just baked the most delicious chocolate granola. This granola makes a rich addition to your morning yogurt, or just sprinkle it over ice-cream, absolutely delicious!
Make it in only 30′ and will remain fresh for 2 weeks, however if I’m being honest this chocolate granola was gone within days!
This recipe is for anyone that can’t live without chocolate but wants to eat healthily. Rolled oats, cashews, pumpkin seeds and cocoa powder are the main ingredients in this recipe. It is refined sugar free, low in fat and you can use gluten free oats, as you can see there is no comparison with this granola to the granola you buy in supermarkets.
To give this granola its rich and intense chocolate flavour I choose a good quality cocoa powder and also added a dash of brewed coffee. As you probably know, pure cocoa powder has a lot of health benefits. It is rich in fibre and iron and works as an antioxidant in our body. Dark chocolate is the best one, choose one with a high percentage of cocoa and you will get the healthy benefits of chocolate. This Chocolate granola makes a rich addition to your morning yogurt, or just sprinkle it over ice-cream, absolutely delicious. Ready in only 30 minutes!
- 2+1/2 cups rolled oats
- 1/2 cup chopped cashews
- 1/2 cup pumpkin seeds
- 1/2 cup coconut flakes
- 1/2 cup unsweetened cocoa powder
- 1/4 tsp of salt
- 2/3 cup coconut oil, melted
- 1/3 cup maple syrup
- 1/3 cup brown sugar
- 2 tsp brewed coffee (opcional)
Line a large baking sheet with parchment paper.
In a large bowl combine the oats, nuts, coconut flakes, cocoa powder and salt.
In a separate bowl whisk the melted coconut oil with the maple syrup, the coffee and the sugar until smooth. Pour it over the dry ingredients and toss to coat.
Spread onto the baking sheet. Bake at 160ºC for 25-28 minutes, tossing 3 times. Remove from the oven and leave to cool down.
Store in an airtight container and it should last for up to 2 weeks.
*Have you run out of cashews? Add some almonds or walnuts instead.
*Use coconut oil or olive oil
