Something in my DNA craves chocolate every single day. This brownie is made with dark chocolate + cocoa powder, what give it a powerful chocolate flavour. It is perfectly moist and very satisfying. After two small pieces I managed to calm my cravings 😉
I baked 3 brownies and ask some friends to try them, there was one that disappeared so quickly, obviously it was the best one and it is the recipe you can find at the end of this post. I also added different toppings to the brownies: walnuts, fresh raspberries and chocolate chips. Can you guess which was the favourite? Everybody agreed raspberries taste amazing with chocolate. I think they give the perfect pop of fruit!
This brownie is the perfect party dessert! But you’ll want to keep the whole pan to yourself. Be aware this healthy brownie is a seriously decadent treat!
It took me some time to figure out how to bake a healthy brownie, I finally perfected my recipe. These super-rich brownies are just as delicious!
- 3 free-range eggs
- 100 g brown sugar can be substituted for white sugar
- 2 Tbsp unsweetened cocoa powder
- 1/2 cup (100g) olive oil, sunflower oil or rapeseed oil
- 80 g wholemeal flour
- 200 g dark chocolate 80% cacao
- 1/2 tsp salt
- 15-20 (125g) fresh raspberries, halved (optional)
Preheat oven to 180 degrees. Line a 20 x 20 cm baking dish with parchment paper.
Place chocolate on a blow and microwave on a low power for 1-2’ until melted. Pour in olive oil and stir until it is well combined.
Sieve the flour into a bowl with the cocoa powder and salt. Set aside.
Using a electric hand whisk or regular one, beat together eggs and sugar until smooth and pale, about 2 minutes. Add melted chocolate mixture and mix until well combined. Then fold in the flour mixture until incorporated. Finally add half of the raspberries, fold into the batter with a spoon.
Spread mixture evenly into prepared baking dish. Sprinkle with the remaining raspberries, press slightly.
Bake in preheated oven for about 20’ or until brownies are almost set (a toothpick will still come out with crumbs).
Let cool at least 30 minutes before cutting and serving.
*Can substitute raspberries with strawberries, walnuts or other nuts.
I like it dense and fudgy, but with a crisp surface. Fudgy or cake-like brownies, which is your favourite? Leave your comments and any suggestions below, and of course tag your photo with the hashtag #shoothecook. Cheers, friends!
