You are going to try 3 things in this burrito recipe: a super tender marinated chicken, roasted cauliflower and the yummiest homemade mango chutney.
The tender chicken and the beautifully roasted cauliflower results in an explosion of flavours and texture. While the Mango Chutney and a bit of yogurt make it the juiciest wrap I have ever tried.

Tasty & spicy wrap with chicken, roasted cauliflower and mango chutney. The perfect wrap for when you want to experiment with new flavours.
- 4 wholegrain wraps
- 2 cups spinach leaves
- 4 Tbsp mango chutney (to make it at home follow the link above)
- 4 Tbsp natural yogurt
- 1 (200g) medium chicken breast cut into bite-size pieces
- 1/4 cup milk or more if needed
- 1/2 Tbsp lemon juice
- 1 tsp paprika
- 1 tsp turmeric
- 1/2 tsp salt
- 1/2 cauliflower head chopped into slices
- 2 Tbsp sunflower oil
- 1/2 tsp chilli powder
- 1/2 tsp ground turmeric
- 1/2 tsp paprika
- 1/2 tsp salt
To marinate the chicken: Place the chicken chunks in a bowl with the marinade and leave overnight or for a minimum of 1h.
To roast the cauliflower: mix all the condiments together in a large bowl, add the cauliflower slices and mix until its coated in the sauce. Place the cauliflower pieces on a baking tray and roast at 180º for 15'.
Heat a pan with a bit of oil and then fry the marinated chicken for 5' or until brown
To assemble the wraps: Moisten each wrap with a bit of water. Spread 1 Tbsp of yogurt and a bit of mango chutney on each wrap. Add the spinach leaves on top.
Now add around 5 pieces of chicken and cauliflower. Sprinkle with a bit more of chutney on top.
Fold the wrap over the filling and then roll tightly at the end to secure. Cut in two and serve.
