A delicious Christmas Granola Recipe flavoured with cinnamon, ginger & nutmeg. This is a very special recipe because we are making this granola for our friends & family. This year I want to encourage people to eat healthy and I thought that could be the ideal homemade gift. This Christmas granola makes the perfect breakfast to replace cereal or pastries. You will love it!
I thought baking this granola for them could be a sweet beginning. It is delicious for breakfast with fresh fruit, as a topping for porridge or as a snack.
You know I’m a big fan of crunchy granola, right? This Christmas Granola is based on my bulletproof granola recipe. When I think of Christmas the colours red and green come to mind so I tried to incorporate these into this granola recipe. Oats, nuts, cranberries and spices make it tastes like ginger biscuits.
Homemade granola is loaded with goodness, made with nutritious ingredients, no refined sugars, no saturated fats..it is real food. It can be made gluten-free oats, buckwheat flakes or other gluten-free grains.
It’s the time of the year when I really enjoy giving homemade food gifts. I love this crunchy and sweet granola. It’s so easy to make, requiring only 35 minutes! Make as much as you want and pack it into nice bags and give to the people you care about. It should keep for 2-3 weeks.
Here is the recipe! I encourage you to share it! It’s so delicious and easy to make that everybody should make granola at home instead of buying it.
Please if you try the recipe take a picture and share it on Instagram with the hashtag #shoothecook so I can see the result 😉 Hope you guys have a superb Christmas!!!
A delicious Christmas Granola Recipe flavoured with cinnamon, ginger & nutmeg. Pack it into small bags for family & friends, they will love it!
- 3 cups rolled oats (or gluten-free oats)
- 2 cups raw nuts, I use the following nuts:
- 1/2 cup cashews
- 1/2 cup walnuts
- 1/2 cup almonds
- 1/2 cup pumpkin seeds
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- 1/4 tsp ground nutmeg
- 2 whole cloves grounded, (optional)
- 1/2 cup honey (can also use maple or agave syrup)
- 1/4 cup coconut oil, rapeseed oil or sunflower oil
- 1/2 cup dried cranberries (or other dried fruit)
Preheat the oven to 160ºC. Line a baking sheet with parchment paper.
Heat up the coconut oil in a small sauce pan or microwave until it melts. Stir in the honey and mix.
In a big mixing bowl place the oats, nuts and spices (don’t add the cranberries yet). Pour in the honey mix and stir well to combine.
Spread granola on the baking sheet and bake at 160ºC for 25-30' or until nicely browned. Halfway.
Allow to cool completely before adding the cranberries. Pack the granola into gift bags or transfer it granola to airtight containers. It will keep fresh for 3 weeks.
*Gluten-free: use gluten-free oats, buckwheat flakes or buckwheat groats.
*Nuts: add your favourite raw nuts and seeds, such us: almonds, walnuts, cashews, hazelnuts, peanuts, sunflower seeds, flax seeds...
*Sweetener: I use honey but you can use maple, agave or rice syrup.
*Oil: I recommend coconut oil or sunflower oil because they have a neutral flavour, but you can also use olive oil.
