This Courgette Soup with Spinach is a cross between a soup and a cream, this is the type of texture I like but you can add more or less liquid to suit your taste. This is packed with green veggies, vitamins and minerals. No doubt this courgette soup will boost your immune system. It has a lovely soft mix of flavours and we are adding just a bit of ricotta cheese to get that extra creaminess.
Green smoothies are a great way to add more veggies in to our diet but what our body wants in winter is a hot pot like this soup. Basically all the ingredients are green which gives the soup its not very attractive green colour. But don’t judge this soup by its colour, it tastes delicious. Try it with some rice, it makes it even better! As you know, soups are such a easy thing to make and your meals are sorted for a few days or even months if you freeze it.

- 2 Tbsp. olive oil
- 1 onion, finely chopped
- 2 (200g) courgettes, chopped
- 2 (150g) medium potatoes, cut into chunks
- 200 g spinach, washed
- 100 g broccoli (optional)
- 3 cups water
- 1 tsp sea salt
- 3 Tbsp ricotta or cream cheese (optional)
Add 2 Tbsp of olive oil to a medium pot over a medium heat. Add in the onion and fry for 5' until soft.
Meanwhile, cook some rice, we will use it as a side.
Add the courguette, the potatoes and the broccoli to the pot. Cook for 5'.
Pour in the water and bring to the boil. Then lower the heat and simmer covered with the lid for 20'. After 15' add the spinach and cook for a further 10'.
Take the pot off the heat and add the ricotta cheese. Using a hand blender or food processor blitz until smooth. Season with sea salt and black pepper to taste.
Serve with a bit of rice on a side.
*You can add broccoli or any other green leafy vegetable to it.
