This Strawberry pasta salad is vegan, comes together in 20 minutes, and requires just 10 ingredients! The base is Whole Wheat Penne Pasta, halved strawberries, avocado, salty feta cheese, sliced onion ,green leaves and a silky balsamic dressing. Simple ingredients that make a delicious pasta salad.

I have never loved a salad as much as this one. It is refreshing and delicious. And do you know what's even better? It only takes 20 minutes to make.
- 160-200 g of wholegrain penne pasta (I used Agnesi Whole Wheat Penne Pasta)
- 2 cups of lamb's lettuce, spinach or rocket leaves
- 6-8 fresh strawberries, sliced
- 1/2 large avocado, finely sliced
- 1/2 cup of cucumber, cubed
- 1/4 cup of feta cheese, crumbled
- 1/4 red onion, finely chopped
- 1/2 cup of balsamic vinegar
- 2 Tbsp of brown sugar, or canned sugar
- 2 Tbsp of extra virgin olive oil
Prepare the pasta according to the packet instructions. Drain and allow to slightly cool. Add to the bowl and drizzle with a bit of olive oil to avoid sticking while you prepare the other ingredients.
Meanwhile, toss the lamb's lettuce, strawberries, avocado, cucumber, feta cheese and red onion together in a large bowl. Add the chilled pasta and toss to combine.
Pour the balsamic vinegar and sugar in a small saucepan. Turn the heat to medium high and bring the vinegar to a boil.
Once boiling, reduce to a simmer and let simmer for about 10’ until the vinegar has reduced. Stir occasionally. It is done when it is thick enough to coat the back of spoon.
Remove from the heat and allow the reduction to cool a bit. Toss the salad with balsamic reduction and a drizzle of olive oil. Sprinkle on some extra feta cheese on top and serve!
*You can use other cheese like cottage cheese or goat cheese instead of feta.
