How is Christmas going? If you over-indulge on sweets on Christmas Day don’t worry more and go back to your healthy diet-habits. These days I was feeling sluggish and my stomach was a bit sick probably just because I ate more than what my body is used to. I had some pineapple leftovers and it is very good for digestion so I made a healthy snack with pineapple & granola that is really easy to make: Pineapple slices with natural yogurt and topped with homemade granola. It’s rich in fibre, vitamins, minerals and feels so good.
Pineapple is a great diuretic food because its high content of water and fiber. It also has anti inflammatory properties thanks to bromelain, a component that helps digestion. That makes it perfect after Christmas excesses. It is very low in calories, has no fats and is a good source of vitamin C. As other fruits pineapple should be eaten more frequently in our diet.
To turn pinapple into this pretty breakfast or snak is very simple. Cut 2 slices of pineapple, add a bit of natural yogurt or kefir and top with granola. I used this Christmas Granola I made a few days ago but you can add your favourite one. Always better to make your own granola at home and you have lots of Granola Recipes in the blog to make it. Most of the granola bags we buy are packed with lots of sugars, fats and are poor in nutrients.
This is going to be my breakfast for a few days, my body was screaming for something like this. If you have more pineapple you should also try this Kale & Pineapple Smoothie, it tastes lovely and feels so good.

- 2 pineapple slices
- 2 Tbsp natural yogurt
- 2 Tbsp homemade granola
- fresh fruit, I choose red currants
Cut two slices of pineapple, add 2 Tbsp of natural yogurt and then top with 2 Tbsp homemade granola. Garnish with your favourite fresh fruit.
