- 1 1 large green bell peppers, cut in strips
- 1 1 red bell peppers, cut in strips
- 1/2 red onion, finely sliced
- 2 ripe tomatoes, quartered
- 10-12 black olives
- 1/3 cup feta cheese, cubed
- 4 Tbsp virgin olive oil
- 1 Tbsp vinegar (I used apple vinegar)
- 1/4 cup fresh basil leaves, snipped
In a medium bowl, whisk the oil, vinegar and basil together.
Combine the peppers, onion, olives and tomatoes in a large bowl.
Toss with salad dressing. Stir the feta cheese cubes and decorate with some basil leaves.
