I love salads and I missed them a lot this week. I was working away and I found it difficult to eat healthy, does it happen you you too? Although I tried, I ended up eating more sweets than usual. But now, after a hectic week, I’m finally back home and my body was craving salads. I made myself this Green Bean Salad With Brown Rice, I couldn’t enjoy it more!
This French bean Salad with Rice is the first thing I’m making in my kitchen. My kitchen cupboards are still quite empty (that won’t last long) and this salad only requires 5 INGREDIENTS. It’s a lazy recipe that makes a tasty & healthy lunch.
I was in need of a detoxing and this simple salad did the trick. It is healthy but also satisfying. Brown rice is the perfect accompaniment to make our salad more nutritious. Nuts & dried cranberries make this salad more sophisticated and visually appealing. They are also so healthy and will give your body the nutrients it needs. Feel free to adapt the recipe to what you have to hand but don’t forget the lemon vinaigrette I suggest below, it’s the key to making a tasty and fresh Green Bean Salad.
These delicious and crunchy beans are low in calories, fat and rich in nutrients. I can’t think of a more versatile vegetable in the kitchen. I add them to stews, stir fries (Sautéed green beans with garlic & almonds), paella and now to my salads. If you want to add more protein to this salad, add pan-fried chicken breast or chickpeas.
Eating healthy doesn’t require extra time, it can be as simple as making this salad in 25’ and you have your lunch sorted.

This Green Bean Salad with Brown Rice requires 5 Ingredients. It’s a lazy recipe that makes a tasty & healthy lunch. I couldn't enjoy it more!
- 500 g fresh beans, you can use frozen
- 1+1/2 cup cooked brown rice
- 1/4 diced red onion
- 1/2 cup chopped cucumber
- 1/4 cup chopped almonds
- 1/4 cup dried cranberries
- 2 garlic cloves, minced
- Juice & zest of 1 lemon
- 1/3 cup olive oil
- 2 tsp honey
- 1/4 tsp salt
Chop the green beans. Bring a large pot of water to a boil, then add the green beans. Boil until bright green and crisp, about 5 minutes. Add the cooked beans to ice cold water to stop them cooking. Drain and set aside.
Cook the rice as per the package instructions. Drain well and set aside.
For the dressing, whisk the olive oil, lemon juice, zest, honey, minced garlic and salt together. You can also mix all of the dressing ingredients together in a small jar.
Placethe onion, cucumber, almonds and cranberries in a large salad bowl. Add the green beans and the rice. Combine and toss with the desired amount of dressing.
