I have changed my regular breakfast toast to this Healthy Sandwich with Avocado & Smashed Chickpeas. These two simple ingredients make the most buttery and tasty spread for your toast or sandwich. If you love guacamole you should try this. No cooking and requiring only 5 minutes, are you ready?
The simple combination of chickpeas, avocado, spring onion, coriander, lime juice and yoghurt make a nutrient-packed breakfast toast or sandwich. It’s suitable for vegans and made with natural ingredients. Chickpeas are so good for you guys! They are rich in carbohydrates, proteins and are a great source of iron and fibre. Avocados are made of healthy fatty acids and essential vitamins such as Vitamin A, C and D. As you can see, this healthy Sandwich is very well-balanced & nutritious.
Firstly we are going to mash the avocado and chickpeas together until smooth. Then add the rest of ingredients and a pinch of salt, to enhance its flavour. This yummy avocado chickpea spread can be used as a dip or as a spread in your sandwiches. Keep it in the fridge and use it within 3-4 days.

Try this Healthy Sandwich with Avocado & Chickpeas for a nutrient-packed breakfast or dinner, it is vegan friendly, rich in fibre, healthy fatty acids and vitamins.
- 1/2 ripe avocado
- 1 cup canned chickpeas, rinsed and drained
- 2 Tbsp natural yoghurt
- 1 tsp lime juice
- 1 tsp finely sliced spring onion
- 1 tsp chopped coriander, parsley or mint
- a pinch of salt
Place the avocado and chickpeas in a bowl and mash with a fork until smooth. Add the rest of the ingredients and mix together. Spread on your favourite sliced bread and enjoy.
*Add more salt, pepper or lime juice to taste.
