Let’s talk about cooking moist chicken breast in a pan. It’s so simple that it doesn’t require a recipe, with a few tips you will be able to cook delicious and tender chicken breasts. These chicken breasts are super versatile, you can add them to salads, pasta dishes or even shredded for your tacos. Try this method and savour the results.
The key to cooking juicy chicken breasts is to marinade it first, it adds a lot of flavour, helps the chicken retain more of its own juices and it doesn’t become dry during cooking. A typical marinade contains lemon juice or soy sauce, any acid will make the chicken more tender. I recommend that you marinade your chicken overnight but if you are in a rush 1h will be fine.
I like to cook these chicken breasts in on a pan because it gets a nice crust but is still moist on the inside. The cooking process is very simple, although it takes around 25′. I promise it’s worth the effort! , you can also cook an extra chicken breast and leave it in the fridge for the following day. I wrap it in cling film and add it to my salads.
For this recipe I used thick chicken breasts but you can make it with chicken fillets which are much thinner. If you are going to use chicken fillets, make sure that you reduce the cooking times by half or it will overcook.

- 3 medium chicken breasts
- 1 garlic clove, minced
- 1 Tbsp soy sauce
- 1 tsp of chili flakes or 1/4 tsp chili powder (optional)
- 1 Tbsp of olive oil
- 1 Tbsp of honey
In a small bowl, whisk the garlic, soy sauce, chili flakes, olive oil and honey together. Place the chicken breast in a plastic bag and pour the marinade over it. Mix well. Leave it in the fridge overnight or for at least 1h.
Heat a medium skillet with a drizzle of olive oil over a medium-high heat. Place the chicken breasts in the hot pan and sear for 2' on each side.
Reduce the heat to low, cover and cook for around 10' depending on how thick your chicken breasts are.
Remove from the heat and let the chicken rest covered for a further 10'
Place the cooked chicken breast on a chopping board and wait 5' for it to cool down. You can slice or shred the chicken breast and serve it on its own or add it to other dishes.
