I really enjoyed this salad; I think it has a lovely balance of sweetness and bitterness. There is also an interesting mix of textures; mangoes have a lovely soft texture while the rest of the ingredients are crunchier, I love that. Do you add fruit to your salads? I made this mango salad recipe for the first time a couple of months ago and everybody loved it. For me it has similar flavours to a Thai salad; could be because of the lemon & ginger dressing.
This is a simple salad recipe that requires only a few ingredients: mangoes, spinach, blueberries, carrots, onion, red peppers and coriander. But you can play around with the ingredients to suit your own individual tastes. I usually have this salad for dinner; it’s colourful and refreshing. It’s also vegan and gluten free.

Do you like to add fruit to your salads? I fell in love with this mango salad recipe; I think it has the perfect balance of sweetness and bitterness.
- 2 cups of baby spinach or chopped into bite-sized pieces
- 1 medium mango, cubed
- 2 green onion, thinly sliced
- 1 red bell pepper, thinly chopped
- 2 carrots, thinly sliced
- 4 sprigs of fresh cilantro, chopped
- 1/4 cup of dried cranberries
- 4 Tbsp of olive oil
- 1 tsp of water
- 1 Tbsp of apple vinegar
- 1 Tbsp honey
- 1+1/2 Tbsp of lemon juice
- 1 cm of ginger root, grated
- 1 garlic clove
In a salad bowl, combine the spinach, mango, green onion, red pepper, carrot slices, and cranberries and sprinkle some coriander on top. Set aside.
Place all the dressing ingredients in a food processor and blend until smooth. When ready to serve, add the dressing and toss gently.
