Moroccan Tomato Salad, a delicious & authentic taste of Morocco. Our trip to Marrakech has left us hungry for more delicious Moroccan food. We are planning to go back before the end of the year but for now we have to be content with the flavours and smell of the Moroccan dishes we cook at home. The last few days in Dublin have been sunny and it feels like summer is finally coming so this weather calls for cool & refreshing recipes like this Moroccan Tomato Salad.
It is a simple tomato salad made with the best vine tomatoes you can get, but what makes me love this salad more was the herbal dressing made with equal amounts of parsley and coriander. Fresh herbs make a salad more fresh and they taste so much better than dried herbs!
There is no recipe needed to make this 5′ Tomato Salad, just follow the steps below and you will remember it the next time you want to make it. I wanted this salad to be the first Moroccan recipe on the blog because it is simple, delicious and I’m sure you will be demanding more Moroccan recipes. Moroccan Tomato Salad, a delicious & authentic taste of Morocco.
- 4 medium ripe tomatoes
- 1/2 yellow onion, finely minced
- 1 handful of fresh parsley
- 1 handful of fresh coriander
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 2 Tbsp virgin olive oil
- 1+1/2 Tbsp vinegar (I used apple vinegar)
Peel the tomatoes and cut in half. Remove the seeds and any liquid. Dice finely.
Wash and chop the herbs very finely.
Mix all the ingredients and add the vinegar and olive oil. Serve.
*This salad will stay fresh for 2 days if it's stored in the fridge.
*Enjoy it as a side dish or on toast
