The 3 basic ingredients that you need for this oatmeal pizza will be found in any kitchen: oats (use gluten free if you want) + eggs whites + milk or nut milk.

Our pizza has a bit of everything: pesto, mozzarella, asparagus, spinaches and Spanish ham or radish, that gives the pizza a pinkie colour. To make this pizza gluten free, just choose gluten free oats for the pizza base. The recipe is so easy: blend everything together, pour it on a baking tray shaping it in to a circle, and bake it.

All you need are 3 handy ingredients to make an easy, healthy oatmeal pizza crust. A delicious solution to satisfy your pizza cravings in only 30'
- 1 cup rolled oats
- 3 egg whites
- 1/4 cup almond milk or your preferable type
- 1/4 tsp salt
- 1/4 tsp baking powder
- 3 Tbsp pesto
- 1 mozzarella ball (125g), sliced
- 1 cup spinach, washed and drained
- 3 asparagus, chopped
- 3 slices of Spanish ham
- 1 egg
- black pepper to taste
Preheat the oven to 200ºC. Blend all the base ingredients together until smooth. The mixture should be slightly thick.
Transfer to a parchment lined baking sheet. Pour in the batter and shape it with a spoon into a round pizza shape, it is very easy. The crust should be about 3-4mm thick.
Bake at 200ºC for 8'. Remove from the oven and turn it over. Spread the pesto sauce over the pizza crust and add the spinach leaves, then sprinkle with an even layer of mozzarella. Top with the chopped asparagus and the Spanish Ham. Return the pizza to the oven for 5' at 180ºC.
Take it out and crack an egg in the middle of the pizza, pop back into the oven for another 6-7' or until the egg white is cooked. Enjoy!
*Make it vegan: use radish slices instead of ham, they will give the pizza a nice pinck colour
*This pizza crust can also be made on a pan. Just cook it on one side for 3', then turn and add the toppings. While it is being cook cover with a lid to allow the cheese to melt like in the oven.
This pizza crust can also be made on a pan, as you can see below. I still prefer making it in the over because the crust gets more crispy but I use the pan method sometimes because it is extremely easy & quick!
If you use a pan just cook the crust on one side for 3′, then turn it and add the toppings. While it is being cook cover the pan with a lid to allow the cheese to melt. By the way this new toppings taste delicious too: tomato sauce, mozzarella, black olives and Provenze herbs.
There are other toppings we have tried on this oatmeal pizza crust:
Mushroom pizza: Pesto, mushrooms, cherry tomatoes and ricotta cheese.
Veggie pizza: tomato sauce, eggplant, zucchini, red pepper and artichoke.
White pizza: white sauce, red onion, spinach, black olives and feta cheese.
Today’s toppings: pesto, mozzarella, spinach, asparagus, Spanish ham and egg.
Can you freeze this after you cook it and how long will it last

Sorry for the delay but I wanted to try the crust on the pan before answer your question. It works perfectly, but I have to say I still prefer making it the oven because the crust gets more crispy (I have added some new photos on the post for the pan method) But I’m sure I will use the pan more than once because it is so quick. Hi, sorry for the delay. I finally got a chance to freeze it and then I baked it directly from the freezer. It worked out ok but the pizza crust is not very crispy, it is more similar to a pancake texture so I won’t recommend to freeze this crust. Sorry for that and thanks a lot for asking. How does the crust taste? I made something similar using almond flour, and it turned out incredibly dry and inedible. Let me know if I should expect the same 🙂
Hi, I liked it and I wouldn’t say it is dry. I tried different cooking methods and I think the best one for this crust is to bake it in the oven as I said in the recipe. Let me know how did it turn out for you! I hope you like it.
Using egg whites creates a vegetarian pizza crust, not vegan. Maybe chia eggs would be a good substitute.

I made the oatmeal crust, the taste
was great, but my texture was lumpy
and thick. I did not see a size for the pan to use, and I noticed in the picture
yours seem to pour out like pancake
batter.
Hi Darlene, I blend all the ingredients together in a food processor until I got a liquid batter similar to pancake batter as you mentioned. The size of the pan in the photo is 23cm, but if you can I recommend to make this pizza in the oven, the texture is much better. Enjoy it!
