It is grapes harvesting time and to celebrate I am sharing this Fancy Ricotta Toast with Grapes and Spanish Ham recipe. The sweetness of the fruit really complement the cheese and ham in this recipe. You can also make a small version of this which would be perfect as an appetizer.
This is a simple and tasty recipe that can be made for dinner or for a delicious snack. I have tried grapes with many things, meat, stews, salads… they are very versatile. They combine really well with savoury ingredients like Spanish Ham or cheese. Grapes also look more sophisticated that other fruits and make even a simple toast the most appealing appetizer on the table.
As you probably know, I live in Dublin and unfortunately grapes doesn’t grow here. When you buy grapes from a supermarket they taste different to eating them directly from the vine. But not to worry, I promise my Ricotta Toast with Grape will taste like heaven.
- 6-8 black grapes
- 1/2 cup cottage cheese
- 1/2 cup rocket leaves or any other green leaves
- 2 slices Spanish Ham
- 1 Tbsp good quality olive oil
- 1 Tbsp sliced almonds
- 2 slices of bread (I used sourdough bread)
- Black pepper to taste
- Add the black pepper to the cottage cheese and mix.
- Spread it on the bread. Add a slice of Spanish Ham on each slice of bread.
- Garnish with some rocket leaves and add the grapes to toast.
- Sprinkle with olive oil and some sliced almonds
I’m from La Rioja, a well know region of Spain for its red wines. At this time of the year the landscape from my house is truly breathtaking. It is like looking at an abstract painting made of small geometrical wine yards with many colours. It’s stunning but unfortunately I couldn’t be there this year. But my memories are with me and I feel like doing something special with grapes this week.
Since the Romans introduced the vine to La Rioja Winemakers have pampered the vine with manual labour and affection. Accordingly every Autumn these vigorous growers produce these sweet and delicate fruits, the grapes. I have heard the harvest has been plentiful and good this year. ¡Congratulations to everybody for such a great work!
