The key ingredient of this soup is the spicy roasted parsnips. Parsnips are related to the carrot family, but have a sweeter taste. They are gorgeous in soups and stews, but also roasted as fries in the oven. Parsnips are also bursting with goodness; being high in fibre, vitamin C, iron, calcium, folic acid and potassium. Give this comforting soup a try to feel more energized.
The sweetness of the parsnips goes really well with the other vegetables. To add an extra kick to our roasted parsnip soup we will use my favourite spices combo to roast the parsnip: cumin + turmeric. I’ve been putting it in everything lately. The roasted parsnip sticks are crispy and very tasty, I don’t think you will be able to resist trying them. I add some extra parsnip sticks to the baking tray every time I make this soup and eat them as fries. If you haven’t try it yet you should add parsnips to your shopping list.
We will add the roasted parsnip to the soup and blend everything together into a creamy parsnip soup. We won’t add cream to it, there is no need as it is silky and soft by nature. Cook a big batch of parsnip soup at the weekend and you are sorted for the week or freeze it up for any lazy days.
