I’m so excited to share this Salmon & Baby Broccoli Frittata with you because I know you are going to love it. It is one of my favourite recipes at the moment because it is healthy, tasty & so simple to make. You can probably guess the ingredients: organic eggs, salmon, onion, baby broccoli, milk and mozzarella…6 ingredients is all you need to create this delicious frittata.
Let’s move on to the recipe but first I just want you to know we are making our own version of a frittata. In Italy, where this recipe comes from, frittatas are much thinner and usually have only 1 to 2 toppings. Hopefully my Italian readers won’t give out to me for this recipe. Don’t forget imitation is the sincerest form of flattery 😉 My version is bigger than the classical frittata recipe, but it’s as easy to make, 20 minutes in total.
You need recipes like this on those days that you don’t really feel like cooking but want something healthy and delicious on the table. This recipe couldn’t be more yummy and delicious!
Are you familiar with Baby Broccoli? It is just broccoli, smaller in size but it has the same properties as broccoli. If you can’t find baby broccoli in your local supermarket don’t worry, you can use broccoli instead. As for the salmon I recommend that you buy organic smoked salmon or make your own at home, it is pretty simple. Check out my recipe on how you can easily make Cured Salmon.

- 6 organic eggs
- 1/4 cup milk or vegetable milk
- 1/2 onion, finely chopped
- 6 baby broccoli or broccoli florets
- 10 slices of smoked or cured salmon
- 6 mozzarella slices (optional)
- ground pepper & salt
Preheat the oven to 180ºC.
In a bowl whisk the eggs and the milk, salt and pepper until foamy. Set aside.
In a medium pan on medium heat drizzle 1 Tbsp of olive oil. Sauteé the onion for 4' or until translucent. Add the bimi and pan fry for 6'. Remove the vegetables from the pan.
Pour the egg mixture in the pan. When the eggs start to cook, add the bimi, salmon and mozzarella slices and cook for 5' (until the base is cooked).
Transfer the pan to the oven (remember to remove the handle if it is not metallic or you can transfer the frittata to a round baking dish) continue to cook at 180ºC for 5'. Enjoy!
*You can substitute the mozzarella for another cheese or you can leave it out.
