You know how much I love my salads, especially when there are as tasty and colourful as this beautiful salad. The combination of fresh Spring strawberries, Parmesan cheese, walnuts and rockets leaves works really well in this strawberry salad. If you haven’t been brave enough to add strawberries to your salad, now is the time to try them!
This strawberry salad has the perfect blend of flavours and textures. I usually make this salad with spinach leaves but I ran out so tried it with rocket leaves which also works well. I love the crunchiness of the walnuts. If you don’t like walnuts they can be substituted for any nuts you like.
Strawberries are the most delicious fruit! They are healthy, low in calories and rich in fibre and vitamins (especially vitamin C). Strawberries go well in salads, jam, on toast and in desserts. Strawberry Salad bursting with juicy strawberries, parmesan and crunchy walnuts with a rich balsamic dressing.
- 4 cups of spinach or rocket leaves
- 6-8 fresh strawberries, sliced
- 6 walnuts, roughly chopped
- 1/4 red onion, finely chopped
- Parmesan cheese
- 1/4 cup of extra virgin olive oil
- 2 Tbsp of balsamic vinegar
- 1/2 tsp of mustard
- 1 tsp of honey
Heat the honey in the microwave for a few seconds, then combine all the dressing ingredients in a jar, secure the lid and shake well to combine.
Wash and dry the leaves, place them in a large bowl. Add the strawberries, red onion, cheese and sprinkle with walnuts. Add the dressing and toss to coat
*You can substitute the walnuts for any other nuts you prefer
*You can substitute the parmesan cheese for goats cheese or ricotta cheese
