The goal of this easy recipe is to enhance the flavour of tomatoes. I remove all the liquid and seeds from them to create a thick, jammy texture. Then I added finely chopped onion, black olives, wholegrain mustard, Perrins sauce, Tabasco, salt, pepper and my favourite olive oil. I let it refrigerate for an hour before I serve it with fresh basil leaves. The result was just delicious!
This is such a simple and elegant dish. It was all things summery when I spooned it on a toast. It’s also a vegan alternative to classic French steak tartare. It is healthier and more refreshing.

Prepare this tomato tartare for your next dinner al fresco, it’s really pretty and tasty!
- 2 meaty tomatoes (such as the beefsteak variety)
- 1/4 cup onion, finely chopped (optional)
- 8 black olives, finely chopped
- 1/2 tsp wholegrain mustard
- 1/4 tsp tsp Perrins sauce
- 1/8 tsp tabasco, more to taste (optional)
- 2 Tbsp extra virgin olive oil
- salt and pepper to taste
Peel and cut the tomatoes, remove the seeds and chop them finely. Place them in a sieve with a pinch of salt to remove excess moisture. Set aside.
Transfer to a bowl and chopped onion, mustard, tabasco sauce, Perrins sauce, salt and freshly ground black pepper. Mix well and adjust seasoning.
I like to serve it as an appetizer with toasted bread and some Parmesan cheese, but this is optional. For a beautiful presentation, use a cookie cutter, and garnish it with fresh basil. Enjoy!
