  • 2 Tbsp. olive oil
  • 1 onion, finely chopped
  • 2 (200g) courgettes, chopped
  • 2 (150g) medium potatoes, cut into chunks
  • 200 g spinach, washed
  • 100 g broccoli (optional)
  • 3 cups water
  • 1 tsp sea salt
  • 3 Tbsp ricotta or cream cheese (optional)
  1. Add 2 Tbsp of olive oil to a medium pot over a medium heat. Add in the onion and fry for 5' until soft.

  2. Meanwhile, cook some rice, we will use it as a side.

  3. Add the courguette, the potatoes and the broccoli to the pot. Cook for 5'.

  4. Pour in the water and bring to the boil. Then lower the heat and simmer covered with the lid for 20'. After 15' add the spinach and cook for a further 10'.

  5. Take the pot off the heat and add the ricotta cheese. Using a hand blender or food processor blitz until smooth. Season with sea salt and black pepper to taste.

  6. Serve with a bit of rice on a side.

*You can add broccoli or any other green leafy vegetable to it.
