Crunchy Quinoa Granola, another delicious homemade granola recipe. One of the crunchiest granola recipes I have made so far, I love it.

Ingredients
  • 1 1/3 (140g) oats
  • 1/2 cup (130g) quinoa
  • 1/2 cup (50g) pumpkin seeds
  • 1/2 cup (75g) pecans
  • 1 tsp cinnamon
  • 1/2 cup (120g) honey
  • 4 Tbsp dark chocolate chips (optional)
Bowl Toppings
  • 1 small banana
  • 1 handful of blueberries
Instructions
  1. Pre-heat the oven to 180°C. Line a large baking sheet with parchment paper.

  2. In a large bowl, stir the oats, quinoa, pecans, pumpkin seeds and cinnamon together.

  3. Add the honey and stir until well-combined.

  4. Pour the granola onto the baking sheet and bake at 180º for 20' or until golden brown, after 10' open the oven to stir the granola so it browns all the way through.

  5. Remove from the oven and allow to cool completely before storing in an airtight container. It lasts up to 2 weeks but I always eat it within days!

Recipe Notes

*If you like sweet things add a full cup of honey instead of 1/2 cup.

*If you don't have pecans, walnuts will do it.

*If you don't have pumpkin seeds you can substitute them for sunflower seeds or leave them out.

*If you're a vegan, substitute honey for maple or rice syrup, the granola becomes even sweeter.
