If you like salmon, you can't miss this Easy Salmon Burger Recipe. It takes 20' to make these super healthy burgers loaded with omega 3 and a tons of proteins.

  • 1/2 medium zucchini
  • 2 (250g) salmon fillets, skin removed & cubed
  • 3 spring onions, minced
  • 1/2 red onion, minced
  • 1/2 tsp ground cumin
  • 1/2 cup fresh mint leaves
  • 1/4 cup fresh dill
  • a pinch of salt
  • 3 Tbsp bread crumbs
  • 1 large egg, beaten
  • 1/2 cup hummus
  1. Grate the zucchini and leave it on a bowl with a pinch of salt for 5'. Then squeeze out the excess of liquid, use a strainer if it's still very wet.

  2. Add the grated zucchini, salmon cubes, spring onions, red onion, cumin, mint, dill and a pinch of salt to a bowl and mix gently.

  3. Add in the bread crumbs and the beaten egg, stir to combine until well-mixed. Mixture will be a bit sticky, but that’s OK.

  4. Divide the mixture into 4 balls, then press and mould them firmly with your hands. Place them on a plate with parchment paper.

  5. Roasted burgers: Roast on a tray with parchment paper at 180º for 20'. Let cool slightly before serving.

  6. Fried burgers: Lightly heat a nonstick pan over medium heat with 1 Tbsp of olive oil. Add the salmon burgers and cook 3-4' per side or until brown and crisp on the outside.

  7. Serve the burgers on your favourite buns or with a bit of salad and top it with some hummus.

Recipe Notes

* Substitute bread crumbs with 2 bread slices (crusts removed).
