Preheat oven to 180ºC and line a large baking sheet with parchment paper.
Add oats, pecans, flax seeds, cinnamon, and brown sugar to a big bowl and stir to combine.
In a small saucepan heat up the coconut oil, then add the honey and the vainila extract. Simmer for a few minutes until well combined into a shiny sauce. Take out from the heat and add the mashed banana, stir well until smooth.
Pour in this sauce over the oats bowl and mix well until everything is thoroughly coated.
Spread onto the baking sheet and bake at 180º about 20'. Have a close eye because it burns easily.
Leave to cool before storing it in an airtight container. It should last for up to two weeks.
* Add 1 Tbsp more of sugar for extra sweetness.
