This Chocolate granola makes a rich addition to your morning yogurt, or just sprinkle it over ice-cream, absolutely delicious. Ready in only 30 minutes!
Line a large baking sheet with parchment paper.
In a large bowl combine the oats, nuts, coconut flakes, cocoa powder and salt.
In a separate bowl whisk the melted coconut oil with the maple syrup, the coffee and the sugar until smooth. Pour it over the dry ingredients and toss to coat.
Spread onto the baking sheet. Bake at 160ºC for 25-28 minutes, tossing 3 times. Remove from the oven and leave to cool down.
Store in an airtight container and it should last for up to 2 weeks.
*Have you run out of cashews? Add some almonds or walnuts instead.
