This Quick Chicken with Grapes is particularly yummy and flavourful thanks to the grapes and rosemary.
Very lightly add salt & pepper to chicken drumsticks.
Heat a pan with 2 Tbsp of olive oil on medium high until hot. Add chicken and cook for 3’ on each side, until golden brown. Remove and set aside.
In the same pan, add onion and carrots, stir well. Cook on a medium-low heat for 10’.
Return chicken drumsticks to the pan and stir in the beer. Cook off the beer for a couple minutes on a medium-high heat until it reduces a bit.
Add water and a thyme spring. Bring to a boil, let reduce and thicken slightly for 5’. Stir in the grapes and cook for another 5’. It is ready!
It can be served over couscous or rice, or just enjoyed on its own. Garnish with more thyme and serve hot.
