Porridge Recipe with Caramelized Banana

Porridge, this is my favourite breakfast and a Winter morning ritual.

Ingredients
  • 1 cup cup rolled oats
  • 3 cups 3 cups water
  • 1/2 tsp ground cinnamon
Caramelized Banana
  • 1 banana, cut into thick slices
  • 1 tsp coconut oil
  • 1 Tbsp honey
  • Cocoa powder for garnishing
Instructions
  1. Place oats and water in a saucepan. Bring to the boil and add a pinch of salt, then turn down to a simmer It should cook for around 8 minutes (depending on the oats type) stir eventually with the wrong end of a spoon until creamy. Add sweetener of your choice and some cinnamon. Serve the porrige in two bolws and top with caramelized banana and cocoa nibs. You can also get inventive and try it with other toppings.

For Caramelized Banana
  1. In the meantime, heat a pan over medium heat with coconut oil. Add bananas and cook for a couple minutes. Then stir in the honey and cook bananas until light brown, around 2', gently flip bananas over to brown other side, will take around 1'.


Recipe Notes

*To make porridge even faster remember to soak the oats in water overnight, they will cook faster.

*Reheated porridge is not the same but when I have leftovers I usually add a bit more water to it and heat it up in a saucepan or microwave on a medium power.
