Healthy & Crispy Oatmeal Cookies made with 6 wholesome ingredients, these are SO delicious!

  • 1 cup rolled oats
  • 1/4 cup (30g) of brown sugar
  • 1/2 cup (50g) of butter
  • 1/2 cup (50g) of wholemeal flour
  • 1 tsp of ground cinnamon
  • 1 organic egg
  • 1/4 tsp salt
  1. Blend the oats to make oat flour. 

  2. In a large bowl beat the eggs & sugar until light and fluffy. Pour in the melted butter and mix until creamy.

  3. Add the flour, oat flour, salt and mix until incorporated. You should have a firm, semi-tacky dough. Cover and chill in the refrigerator for at least 20’ or overnight.

  4. Preheat the oven to 180°C and line a baking sheet with parchment paper.

  5. Add one tablespoon of dough onto the baking sheet. Flatten them a bit with your hands and bake at 170º for about 15’or until the edges turn golden brown.

  6. Allow to cool on wire rack.

Recipe Notes

* Chocolate chips, raisins or chopped nuts are all delicious add-ins.

*To substitute butter, use 3 tbsp of ground flaxseed for every tbsp of butter.
