Delicious and nourishing Chicken Sandwich Recipe with hummus and greens; perfect for a healthy & quick lunch.

  • 4 slices of bread (Rustic style preferred)
  • 1/2 cup homemade hummus
  • 1/2 cup spinach leaves, washed
  • 1 medium cooked beetroot, sliced
  • coriander for garnishing (optional)
Roasted Carrots
  • 3 carrots, finely sliced lengthwise
  • 1/2 Tbsp sunflower oil
  • 2 Tbsp lemon juice
  • 1 tsp brown sugar
  • 1/4 tsp ground cumin
  • pinch of salt
Pan Fried Chicken Breast
  • 1 chicken fillet (200g)
  • 1 Tbsp soy sauce
  • 1 Tbsp of olive oil
  • 1 Tbsp honey
  • 1 garlic clove, minced
  • 1/2 tsp chilli flakes (optional)
  1. Roasted carrots: combine all the ingredients in a small bowl, add the carrots and leave to marinade for at least 10' or for a couple hours. Place them on a baking dish and roast at 180ÂșC for 15' or until slightly brown.

  2. Marinade the chicken for at least 10'. Heat a pan over a medium-high heat with a drizzle of oil. When it is hot, add the chicken and cook for 2' on each side until golden. Reduce the heat to low and cover, cook for 10'. Remove from the heat but leave to rest covered for a further 10'. Leave to cook a bit and then cut it in slices.

  3. To assemble the sandwiches: first spread 2 Tbsp of hummus on your bread, add some spinach leaves and 3 beetroot slices on top, place the chicken pieces and finally top with roasted carrots. Place another slice of bread on top and enjoy.
