I eat very healthily but in everything you do, you need to treat yourself from time to time. It helps to break the monotony and makes it easier to maintain good habits. Don’t worry! This yummy & Easy Chocolate Brownie is not the end of healthy recipes in Shoot the Cook but it was so good that I felt I had to share it with you. I have never counted calories, it is a waste of time in my opinion. You know that brownies are a treat but if you make sweet treats at home you know what is in them and honestly there is nothing bad in this Chocolate Brownie recipe.

There are thousands of brownie recipes out there and most of them are delicious but I don’t eat much sugar so they are a bit too rich for me. I decided to experiment with ingredients in this recipe to make it a bit lighter. The result is this moist but crispy brownie that you won’t be able to resist.
One more important thing, don’t over cook your brownie. Bake it as per the recipe, if you overcook it will become dry. When the brownie is cooked your kitchen will smell like melted chocolate. It smells so good that I often leave my oven open for a bit after..mmm.

Easy Chocolate Brownie, not the healthiest dessert in the blog but it tastes like heaven. I have reduced the amount of fat in it and added only the essential brownie ingredients.
- 200 g dark chocolate
- 120 g butter (room temperature)
- 180 g sugar
- 3 large eggs
- 125 g regular flour
- 3 Tbsp cocoa powder
- pinch of salt
Melt the chocolate and the butter in the microwave for 50' at low power or on a small saucepan. Stir until melted.
Beat the eggs in a big bowl, add the sugar and stir to combine with a manual or electric whisk.
Stir in the melted chocolate, stir well.
Add the flour, salt and the cocoa powder. Stir well until a smooth dough.
Preheat the oven to 180º and cover a baking tray with parchment paper and grease it a bit. Pour in the dough and bake at 180º for 20'.
If you want to bake the brownie inside the eggs start by making a small hole in each egg with the scissors. Take out the egg and clean the inside with water, shake and take out the water. Put them on a towel with the hole looking down until they are dry (20'). Add a bit off oil on each one before pouring the dough.
*Add a bit of oomph to your brownie by adding some nuts or a drizzle of orange juice to the dough. I love to add some hazelnuts.
*You can use cooking chocolate or any other type of chocolate, just experiment until you find the one that works for you.
