These healthy and crispy oatmeal cookies are SO good, so good that I couldn’t stop eating them and ate them all in one sitting….ooops! These are the best crispy oatmeal cookies I have ever made! I wrote this post quickly after making them because I wanted you to try them. I’m sure you will fall in love with these crunchy & healthy oatmeal cookies!
Making healthy cookies that taste delicious can be tricky but this recipe proves it’s possible. These crispy cookies have some of the heartiest ingredients I know. All you need are: oats, wholemeal flour, brown sugar, organic eggs, cinnamon and a bit of butter. The main ingredients are oats, well more specifically oat flour. I used to buy oat flour until I realised I can blend oats to make my own.
There are many oatmeal cookie recipes out there but most of them are chewy in texture while I wanted crunchy cookies. Which one do you prefer? After days of trial and error this was the best recipe to share with you. On the blog we have other healthy cookie recipes like my Banana Oatmeal Cookie and the Peanut Butter Cookies however these are more chewy in texture so I was pretty freaking excited about this recipe.
The other amazing thing in this cookies are the apple pieces in them. It was a last minute addition, but I’m so happy we added them because it gives a fresh and fruity touch to the cookies. Nobody will be able to resist these pretty cookies.
Why not double on ingredients and you can make homemade granola too? To make homemade granola you will need almost the same ingredients. Once the oven is hot enough you can bake the cookies and granola at the same time. There are a lot of granola recipes on the blog, choose the one you like more and you are ready to start.

Healthy & Crispy Oatmeal Cookies made with 6 wholesome ingredients, these are SO delicious!
- 1 cup rolled oats
- 1/4 cup (30g) of brown sugar
- 1/2 cup (50g) of butter
- 1/2 cup (50g) of wholemeal flour
- 1 tsp of ground cinnamon
- 1 organic egg
- 1/4 tsp salt
Blend the oats to make oat flour.
In a large bowl beat the eggs & sugar until light and fluffy. Pour in the melted butter and mix until creamy.
Add the flour, oat flour, salt and mix until incorporated. You should have a firm, semi-tacky dough. Cover and chill in the refrigerator for at least 20’ or overnight.
Preheat the oven to 180°C and line a baking sheet with parchment paper.
Add one tablespoon of dough onto the baking sheet. Flatten them a bit with your hands and bake at 170º for about 15’or until the edges turn golden brown.
Allow to cool on wire rack.
* Chocolate chips, raisins or chopped nuts are all delicious add-ins.
*To substitute butter, use 3 tbsp of ground flaxseed for every tbsp of butter.
