Prepare this tomato tartare for your next dinner al fresco, it’s really pretty and tasty!

  • 2 meaty tomatoes (such as the beefsteak variety)
  • 1/4 cup onion, finely chopped (optional)
  • 8 black olives, finely chopped
  • 1/2 tsp wholegrain mustard
  • 1/4 tsp tsp Perrins sauce
  • 1/8 tsp tabasco, more to taste (optional)
  • 2 Tbsp extra virgin olive oil
  • salt and pepper to taste
  1. Peel and cut the tomatoes, remove the seeds and chop them finely. Place them in a sieve with a pinch of salt to remove excess moisture. Set aside.

  2. Transfer to a bowl and chopped onion, mustard, tabasco sauce, Perrins sauce, salt and freshly ground black pepper. Mix well and adjust seasoning.

  3. I like to serve it as an appetizer with toasted bread and some Parmesan cheese, but this is optional. For a beautiful presentation, use a cookie cutter, and garnish it with fresh basil. Enjoy!
